Really, who doesn't need a dozen cans of Organic Pumpkin?! I saw a "slickdeal" for just that last night and it will be delivered to our door on Friday! Of course, I had to make a quick call to mother dearest to make sure it was a good deal. I'm not the usual "buyer" for our pumpkin bread ingredients! She said she usually pays about $3.00 a can so a dozen cans for $10.20 with no tax and shipped to my door is a steal! I told her I would be happy to buy the supplies and send them over in exchange for her making us pumpkin bread, ha! So over-the-top thoughtful of me ;)
One of my friends brought us a loaf of this bread when I was recovering from my accident and it has quickly become a family favorite. Lucky for us, Grams is always willing to make it when we ask!
* 1 cup butter or margarine, softened
* 3 cups sugar
* 3 eggs
* 3 cups all-purpose flour
* 1 tablespoon baking powder
* 1 1/2 teaspoons baking soda
* 1 1/2 teaspoons ground cinnamon
* 1 1/2 teaspoons ground cloves
* 1 1/2 teaspoons ground nutmeg
* 1 (16 ounce) can solid pack pumpkin
In a mixing bowl, cream butter and sugar. Add eggs; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Stir in pumpkin. Pour into two greased 9-in. x 5-in. x 3-in. loaf pans. Bake at 350 degrees F for 1 hour or until bread tests done.
